CHICKEN ADOBO

Chicken Adobo
Ingredients
-1/2 cup soy sauce
-1/2 cup distilled white vinegar
*Equal parts soy/vinegar; you can increase amount to make sure chicken is almost covered.
-Several (6-8) garlic cloves smashed with the side of a knife and peeled
-1 teaspoon whole black peppercorns or freshly cracked pepper
-2 bay leaves
-bone-in chicken thighs (you can also use chicken drumsticks).
-Optional scallions

Put first 5 ingredients in a pot or pan that has a lid, and then add in chicken, skin side down. Bring to a boil over high heat, and then cover and simmer over low heat for about 30 minutes.
Flip the chicken over, and then cover and simmer for another 10 minutes.
Uncover pan and remove chicken, placing skin side up onto a sheet pan (*tip: first cover pan with foil or parchment paper for easy cleanup). Broil chicken to crisp the skin, about 3-5 minutes. Watch carefully 😬
While broiling chicken, turn heat up under sauce in pot to boil and reduce, about 5-7 minutes. Skim as much fat as possible from sauce.
Serve with sauce on the side.

To be extra and add some color, you can sprinkle with some sliced scallions, with the salt bae technique.
